Ingredients
6 or 7 med. sized orchard apples cored peeled and cut into pieces (4 1/2 cups) (tart cooking orchard apple varities: Northern Lights, Northwestern Greening, or Oriole) if you haven't fresh tart orchard apples, use Grannysmith or Greening
1 1/2 teaspoons of lemon juice, 3/8 cup quick cooking oats
3/8 cup hemp seed Granola (hemp seed Granola is available at most Health food stores and at the Superstore) (if one hasn't a 3/8 measuring cup, it's 1/4 cup plus 2 Tablespoons)
1/2 cup all-purpose flour
1/4 cup brown sugar
1/3 cup plus 1 1/2 Tablespoons fresh dairy butter softened
1 teaspoon of cinnamon
1 teaspoon of ground allspice
1 1/2 Tablespoons of poppy seed
a handful of slivered pecans
Topping ingredients:
1 1/2 cups brown sugar packed,
4 tablespoons flour
1 cup boiling water
dash salt
2 tablespoons dairy butter
2 tablespoons cream
2 ounces of spice rum.
Directions
"Apple Freddy"
heat oven to 375°F Grease bottom and sides of a square 8"x 8"x 2" pan with shortening.
4 to 6 med. sized orchard apples (4 1/2 cups) into a bowl (tart cooking orchard apple varities: Northern Lights, Northwestern Greening, or Oriole) if you haven't fresh tart orchard apples, use Grannysmith or Greening. Peel, core and cut into pieces, add 1 1/2 teaspoons of lemon juice over apples and mix so it coats all the apples. Spread these apples evenly in the pan.
- in a large bowl: mix 3/8 cup quick cooking oats, 3/8 cup hemp seed Granola (hemp seed Granola is available at most Health food stores and at the Superstore) (if one hasn't a 3/8 measuring cup, it's 1/4 cup plus 2 Tablespoons) 1/2 cup all-purpose flour, 1/4 cup brown sugar, 1/3 cup plus 1 1/2 Tablespoons fresh butter softened, 1 teaspoon of cinnamon, 1 teaspoon of ground allspice, 1 1/2 Tablespoons of poppy seed, and a a handful of slivered pecans. Sprinkle this mixture evenly over the apples and press this crumble mix firm down on apples.
Bake "approx." 30 minutes or a li'l longer until topping is golden and apples prick easily with a fork.
Topping: Spiced Rum & Caramel Sauce:
1 1/2 cups brown sugar packed, 4 tablespoons flour,1 cup boiling water, dash salt, 2 tablespoons butter, 2 tablespoons cream, 2 ounces of spice rum. Preparation: Mix sugar with flour in saucepan; blend well. Add water and salt. Stir while cooking for 6 to 8 minutes. If too thick add a little more water. Remove from heat; stir in butter and cream. Let cool, then stir in the two ounces of spiced rum.
Serve warm in bowl with a scoop of home churned vanilla ice cream or a good quality ice cream like Breyers, drizzle Spiced Rum & Caramel sauce over ice cream... Enjoy :)
