About This Recipe: If you've got the money and you're feelin fancy, use the pink salmon. If your budget's runnin low, use the jack mackerel...they're both delicious.

Ingredients

1 can (15 ounces) pink salmon or jack mackerel, drained, de-boned, and flaked
1 good sized jalepeno pepper seeded and chopped fine
1/4 cup celery chopped fine
1/2 cup onion chopped fine
About 1/2 cup crushed saltine crackers
1 egg beaten
Salt and black pepper to taste
Beer as required

Directions

Mix all ingredients in a medium mixing bowl 
If mixture seems a little dry to hold together, pour a swig or two of beer in it
Shape into hamburger sized patties
Fry'em good and brown in a skillet with 1/4" oil, shortening, or lard
Drink all remaining beer :)
