About This Recipe: Watch closely during the second half of cooking these beans. As the broth thickens it tends to stick & possibly burn to the bottom of the pan.

Ingredients

1 16 oz. bag of dried great northern beans

1 handful of diced white bacon (salt pork)

1 medium sized onion chopped

1/4 cup celery chopped fine

1 good sized jalepeno pepper seeded and chopped fine (optional)

black pepper to taste

salt or chicken bullion cubes as required for desired sodium level

Directions

Soak beans in water overnight

Drain beans and add all other ingredients except salt

Cover with water and put on a slow simmer

After an hour or so, taste broth and add salt or chicken bullion cubes as required for desired sodium level

Serve over rice or corn bread if desired
