About This Recipe: It's all in the brine. It keeps the moisture level high and puts the brine flavors all the way through the meat. We would have never thought about pulling the skin off chicken before cooking it until we started brining.

Ingredients

Brine:

1 quart water

1/4 cup kosher salt

1/8 cup sugar

Black pepper, garlic, or any other seasoning you'd like

 

The rest:

Chicken thighs with skin removed

Barbecue sauce if you want it

 

Directions

 

Place chicken in a ziploc bag

Mix brine and pour over chicken

Seal bag and brine chicken for 1 hour

Drain chicken and place on rack while you're getting the grill ready

Grill chicken until chicken until cooked all the way through

Baste with favorite BBQ sauce during the last 10 minutes or so
