Jalapeno Cornbread

About This Recipe: Everybody in this house loves the sweetness and moist texture of this cornbread. It has good pepper flavor, but is not spicy as long as the pepper seeds are removed.
Ingredients
1 cup milk
1/4 cup vegetable oil plus a little more to coat the bottom of the skillet
1 large egg beaten
1 large jalapeno pepper seeded and chopped fine
1 1/4 cup corn meal
1 cup all purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
Directions
Coat inside of cast iron skillet with vegetable oil and place in 400 degree oven.
Mix all wet ingredients including the pepper.
Mix all dry ingredients.
Mix wet and dry ingredients and pour into skillet just as the oil has started smoking.
Place in 400 degree oven for twenty minutes. Insert toothpick and see if it comes out clean. If it does the cornbread is done.
